Chardonnay is a very difficult grape to grow in Champagne, Jean Marc's grandfather was convinced the soils in Charly sur Marne being so similar to Chablis would be most suited for it, instead of the region's favourite Pinot Meunier. This choice was a risky one as Chardonnay is also the first grape to debud and therefore if frost occurs in late spring it can wipe out a harvest in a single night. Nevertheless he took the gamble. Years later we can enjoy the fuit of his labor for our greatest pleasure. The vineyards are nestled in the sundrenched amphitheatre of Charly sur Marnes. from the first plots Jean Marc converted ti organic and biodynamic viticulture as early as 2009.
Terroir: Marne Valley. Crus of Charly-Sur-Marne and Saulchery. Vineyard Plots: Le Chemin de Citry, Les Haies, Les Chaillots, Les Grès, Les Anes, Les Garennes. Varietals: 100% Chardonnay. Geology and Soil: Limestone marls on a substructure of soft limestone from the Lutetian era. An abundance of millstones and silex. Fermentation: Stainless steel, temperature controlled tanks. Long alcoholic fermentation at ultra low temperature. Assemblage and Reserve Wines: Blending of plot selections from the first press juice with reserve wines aged in old oak barrels from Champagne and Burgundy. Ageing: 60 months maturation on the yeasts. Disgorging: 6 to 10 months prior to shipping. Dosage: 6.5 g/l.
